YAY! It's the weekend! Time for some Cheesecake, with a twist!


It's the weekend! Time to pull out all the good tasting dessert and some good wine! What about trying something new this weekend? Oh yeah, we can have many slices of good tasting cheesecake! The name cheescake can be misleading though as this tasty treat is non dairy and is made of nuts. But don't despair, it looks like cheesecake and it is just as yummy! And I didn't think twice about indulging when I sliced through this yummy goodness! Let me know if you give it try.

 Ingredients:


Crust:
1/2 cup walnut

1/2 cup pecans
1/2 cup macadamia nuts (I suggest soaking in some water overnight)
1/2 cup dates pitted
pinch of salt
1/4 cup unsweetened shredded coconut




Filling:
3 cups cashews (I suggest soaking in some water overnight)
3/4 cups lemon juice
3/4 cups agave nectar
3/4 cups coconut oil
1 Tbsp vanilla extract
water as needed
